Note: This guide uses Pavtube Blu-ray Ripper for Windows (Windows 8 compatible) screenshots. The way copying Blu-ray to MKV format with Dobly Digital 5.1 audio is almost the same. Just make sure you get the right version according to your computer operating system. A BD drive is needed for ripping Blu-ray discs.
Step 1: Insert your Blu-ray disc to BD drive and run the Blu-ray Ripper. Click "Blu-ray disc" icon to load your Blu-ray files. You can also add DVD disc, ISO/IFO and BD/DVD folders.

Step 2: Select MKV as output format. Click "Format" bar, and move mouse cursor to Common Video > MKV(Matroska) Video (*.mkv) or HD Video > MKV HD Video (*.mkv), click to choose as output format.

Step 3: Then click "Settings" and customize advanced audio and video parameters. Here you choose a favorable format from versatile video and audio formats. Since we're talking about 5.1 sound, so just set "Codec" to "AC3" and "Channels" to "5.1 channels", and confirm your settings by clicking "OK". You can change the video encoder, resolution, frame rate, etc.

Keep in mind the file size and video quality is based more on bitrate than resolution which means bitrate higher results in big file size, and lower visible quality loss, and vice versa.
